Question: how is that oven only shortcut method? I mean obviously doing it the proper way would be best, but I don't even know anyone who owns a smoker. I just know someone who has a brisket in their freezer from the last time granddad slaughtered a cow.

You can make a smoker with a cardboard box and hot plate.

It's not bad, AT ALL. In fact chances are you have had some oven-cooked briket at some point. A lot of restaurants, unless they specifically tout their 'smoking' usually cook brisket this way.

What Frost said. Marinating in liquid smoke a day adds a lot of flavor. The triple wrap in foil is the key to the quality, brisket just falls apart.

So I made this amazing meatloaf last night.. Super Easy
Ground beef about 2 lbs
Oatmeal about 2 cups
Onions about 1/2 cup
2 eggs
Catsup lots
Mustard lots
bbq sauce
salt, pepper, desired spices

mash everything together (best if you use your hands), top it with lots of bbq sauce.

sometimes I also put in dried cranberry or dried apple.. adds some tang..

I have a belly full of lunch and my first reaction to seeing that meatloaf was "GODDAMN, GIMME SOME!!"

SO during our outage, I decided to go ahead and make my pot roast.. I won't post ALL the pictures but here's a few..
BTW just cut up yummy stuff, and throw into a crock pot with some bottom round or rump roast and cook on low overnight (10 or so hours)
I'll let you know in the morning how amazing it is..

Tascha you should trying cooking your meatloaf in your crockpot. I mean GOD DAMN, crockpot meatloaf. Something about meat stewing in its own juices for hours on end just makes things more delicious.

If you're set on using a loaf pan in the oven, you should try using half ground beef and half ground turkey. That's the way my grandma used to do it. Bit leaner, and sticks together better for when you go to make sandviches out of the leftovers.
