Brine that bad boy.

EDIT: Last year, my dad submerged the turkey in brine and left it outside overnight to chill. It stayed moist for a week. It was obscene.

I think my uncle just rubs our turkey with a mix of rosemary, paprika, and thyme, then roasts it like any other bird.

I use a roaster oven. Does a great job and it's portable. Also, they're pretty cheap at walmart (I've got the cheapest one).

Take out the gibs. Rub that bitch down with oil (for a crispy skin), and salt and pepper, or whatever you fancy. Keep the lid on while cooking - it's doing fine. If at the end of cooking and it's not as brown as you'd like, pop in conventional oven for a few.

1hr per ?lbs @ ?Temp... I forget this every year

I second this. Whatever you do, BRINE THAT BITCH.

Get an LARGE pot or an ice-chest even and just brine it for at least a day. You'll be VERY happy you did. My wife did this and let me tell you...that bird was fucking amazing.

You guys talked me into the brine. Did a bit of reading up on it, and it sounds amazing. Gonna try this recipe. Sounds good and there's a shit load of good reviews.

Did you watch any of the videos? Dude reminds me of the tf2 medic, without the accent. He even makes a bone saw reference.

Can't wait to confirm it as well!

Got my bird in the brine at 8am today. Going to give it a 24 hour soak.
